Coffee and Altitude — Why High Grown Beans Taste Better

 

If you look at the labels of specialty coffee bags, you will often see altitude listed alongside the origin and processing method. This is not decoration. Altitude is one of the most important factors in coffee quality.
Why Altitude Matters Coffee plants grow best in tropical climates with distinct wet and dry seasons, rich soil, and temperatures between 15°C and 24°C. At higher altitudes, temperatures are cooler and the growing season is longer. This slower maturation allows the coffee cherry to develop more complex sugars and organic acids — which translate directly into more complex flavour in the cup.
The Science At lower altitudes, coffee cherries ripen quickly. Fast ripening means less time for sugars to develop, resulting in a simpler, less nuanced flavour. At higher altitudes — typically above 1,500 metres — cherries ripen slowly over several months. The result is a denser bean with higher acidity, more sweetness, and greater complexity.
High Grown vs Low Grown The terms High Grown (HG) and Strictly High Grown (SHG) are used in Central America to classify coffee by altitude. SHG typically means grown above 1,500 metres. In Ethiopia and Kenya, the best coffees are grown between 1,800 and 2,200 metres. Panama's Geisha — the world's most expensive coffee — grows above 1,600 metres in the Chiriquí highlands.
What to Look For When buying specialty coffee, altitude is a useful quality indicator. Beans grown above 1,500 metres will generally have more complexity and acidity than those grown at lower elevations. Combined with good processing and skilled roasting, high-altitude beans produce the most memorable cups.
